i'm not in the mood to deal with anyone unless i get to do all the talking & you agree with everything i say.
i spent my weekend making fresh horchata for horchata cupcakes which were inspired by this blog.
i combined a couple of different recipes for the horchata, which involved processing white rice & soaking it overnight in water with lime zest, blanched almonds and cinnamon sticks. then you blend it, add more water, blend again & strain twice.
i used cupcake blog's recipe for the cupcakes which turned out fantastic. the only thing i'd do different next time is cut the cinnamon in half.
i didn't want to use her powdered sugar buttercream, so i made a swiss meringue buttercream & whipped 1/3 cup of the fresh horchata into that.
