pumpkin (apple) butter.

i decided to make pumpkin butter with the pre-halloween sugar baby pumpkin.

roasted it whole at 350 for about 90 minutes.

into the 350 oven

Let it cool, then dug the guts out with a spoon & peeled it

roasted pumpkin

used an immersion blender to puree the roasted flesh.

pureed roasted pumpkin

added 1/2 cup brown sugar & a bunch of spices to it. stirred over med-lo heat until the liquid evaporated.

it looked great.
it smelled great.
it tasted like crap.


so i am making some apple butter to mix it with so all that work doesn't go to waste.

i don't know how pumpkin (apple) butter tastes yet because the apple butter is still on the stove.

when i was searching for pumpkin butter recipes i didn't exactly hit the jackpot.

maybe this is why.
