polenta cookies with orange and chocolate.

i subbed orange zest for lemon and my preference is to use superdark chocolate when combining with orange, so i added about 1.5 oz of chopped bittersweet chocolate (71%).

also, there is no way in hell you're piping S shapes with this dough because it's far too stiff for a piping bag. i rolled the dough into balls, flattened them out with the bottom of a glass & finished off with a sprinkling of turbinado.
