Cook's Illustrated has done it again. i just tested their recipe for New York-Style Crumb Cake (May & June 2007) & it was perfect in every way.
the texture of the cake is oh so fine & tender & the crumbs are super tasty. breaking the crumb dough up into "large pea-sized pieces" is kind of a pain, but i can live with that.
i baked this up in 2 (6") square pans instead of 1 (8") square because i prefer to give away little cakes instead of pieces of cake if i can. baking time was exactly 31 minutes.
