recipe test: buttermilk donut cupcakes.

these were inspired by flickr user Glorious Treats, who did the most gorgeous mini cupcakes tossed with cinnamon-sugar.

i was going to try her recipe, but then i got to thinking about the gigantic container of buttermilk sitting in my fridge that needs to be used up. i love buttermilk donuts, so i ended up using this recipe for Vanilla Buttermilk Cupcakes from Sunset Magazine with the addition of 1/2 tsp of nutmeg.

tossed with cinnamon sugar, they are ridiculously good.

Notes:

  1. i couldn't taste the nutmeg at all, but i think if i keep it at 1/2 tsp but switch to freshly grated it should be fine.
  2. i baked these as regular-sized cupcakes so i could see how the recipe behaved. if you're tossing with cinnamon-sugar, they really should be baked as minis because they are very sweet.
  3. let cool in pan 3 minutes before turning out onto a rack.
  4. have your bowls of melted butter & cinnamon-sugar topping ready to go when the cupcakes come out of the oven. you want to toss them while they are still warm.
  5. i doubled Glorious Treat's cinnamon-sugar topping (actually, i used 1/2 C + 2 T melted butter & 1 C sugar + 4 tsp cinnamon). this was the perfect amount for rolling.
