Texas Sheet Cake with Brown Sugar Buttermilk Icing.
This is what I baked this weekend. It has nothing to do with leftovers.
I halved a Texas Sheet Cake recipe (from Chocolate by Nick Malgieri) and baked it in 2 (7") rounds.
Icing: Brown Sugar Buttermilk.
I've never tried a boiled buttermilk icing before. If you can get past the fact that it separates, you're in for a treat. The icing is silky-light & tastes subtly of pralines.
Note: whip the icing in a stand mixer until cool, about 10 minutes.
