potato chip cookies.

i made these cookies to honor a significant event in my friend's life. i might have baked her a cake, except I've come to realize that if there's one thing Teresa from Tipperary loves, it's crisps & she's always got a bag of some flavor or another around.

lately, she's been into the cracked pepper or salt & vinegar chips, but you can always tell when Safeway's running a 2-for-1 on the Lay's Sour Cream & Onions.

i split the dough into thirds and did some plain, some with roasted almonds and some with chocolate chips.

plain or with add-ins, these sweet & salty cookies are absolutely delicious.

the recipe by King Arthur Flour is perfect as written, right down to the baking time: 12 minutes for a cookie that's crispy on the outside and slightly soft on the inside.
