strawberry banana cupcakes
the 2 ripe bananas on my counter inspired these cupcakes with strawberry cream cheese icing. i folded some chopped semi-sweet callebaut into half of the icing because chocolate goes with bananas & strawberries.
except in this case.
the addition of chocolate confused the strawberry-banana flavor combo and almost completely masked the brightness of the strawberries. so my vote goes for straight banana cupcakes with strawberry cream cheese icing.

Strawberry Cream Cheese Icing
Notes: you can cut this recipe in half for 12 cupcakes. icing is soft, so i wouldn't try to pipe with it.
8 oz cream cheese
3 oz unsalted butter
4-5 cups confectioners sugar, sifted
1/4 C strawberry sauce
Strawberry Sauce
2 cups fresh strawberries
2 T sugar
Wash strawberries, remove stem, cut in half.
Macerate with 2 T sugar for 15-20 minutes.
Cook macerated strawberries, covered, in a small saucepan over medium low heat for about 10 minutes or until strawberries are soft. Cool. Puree for sauce.
