cornflake cookies.
a lot of things tasted good when you were a kid, but when you taste them again as an adult you wonder how you stood even one of them, let alone a whole plateful.
but not cornflake cookies. they're sweet, light, crispy, chewy, coconutty little nuggets of sunshine & picnics.
really.
i'm not sure how well they'll hold up, but we'll see.
also, you should probably just go ahead & double the recipe.

Cornflake Cookies
Yield*
2 1/2 cups sweetened, flaked coconut
1 1/2 cups cornflakes
3 egg whites
2/3 cup granulated sugar
1/4 tsp salt
1 tsp vanilla
1 Tbsp malted milk powder (optional)
Heat oven to 325 deg F.
In a medium bowl, combine coconut and cornflakes.
In a large bowl, beat egg whites till soft peaks form. Gradually beat in sugar, till stiff peaks form.
Beat in salt, vanilla and optional malted milk powder. Stir in coconut/cornflakes.
Drop by teaspoons onto silpat-lined baking sheets. Bake at 325 for approximately 15-17 minutes, or until golden brown. If baking 2 sheets at a time, switch pans halfway through baking.
Cool on pans about 5 minutes, before removing to racks to cool completely.
*i made some big & some small so i could check baking times, but i'm going to say this recipe made about 30 cookies.

Awesome! i had been looking for the recipe for quite sometime now. Though em not sure that the ones i had when i was little had coconut added too .. anyhow, thank you for posting =)
