when i lived in LA i had a garden. our chili pepper plants always went nuts in august & we were canning jalapeño jelly every weekend, so as far as i'm concerned it's not august without jalapeños.
some of you may remember that i offered to cohost a cupcake contest last august. my cohost & i chose jalapeños for the theme.
we split the entries in half for testing. the plan was for each of us to pick a winner from our half of the recipes, swap those recipes & then pick a winner from the final 2.
i tested my half, my taste testers chose a winner, my cohost went MIA & here we are a year later.
i figure there's no better time to post my testers' favorite jalapeño cupcake than the 1-year anniversary of the August 2008 Cupcake Jalapeño contest.
belated thanks to everyone who submitted a recipe and to my enthusiastic taste testers & belated congratulations to Suzy of Cupcakes and Candles for her Jalapeño Jelly Cupcakes with Pineapple Cream Cheese frosting.
Her lightly sweet cupcake has a dollop of bright & spicy jalapeño jelly inside and is topped with fluffy pineapple cream cheese frosting. Even without the benefit of her dad's homemade jalapeño jelly (i was stuck with store bought) all of the textures and flavors of this cupcake worked together perfectly. her cupcake was the overwhelming favorite.
