honey bran muffins with five-spice.
i've been looking for a good bran muffin recipe. i'm a purist and don't want a lot of crap in my bran muffins. just good, tender branny goodness.
1st recipe test & i got exactly what i was looking for.
Honey Bran Muffins with Five-Spice
adapted from epicurious
Yield = 9 muffins
1 stick (1/2 cup) unsalted butter, softened
1/4 cup firmly packed light brown sugar
1 large egg, beaten lightly
1 cup yogurt or sour cream
1/4 cup honey
1/2 tsp vanilla
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 tsp five-spice powder or cinnamon
1 cup unprocessed wheat bran
Beat butter and brown sugar until light and fluffy. Beat in egg, yogurt, honey and vanilla.
Stir together flour, baking soda, salt and spice. Add to egg mixture, stirring just till combined (batter will be thick).
Line cupcake/muffin tin with paper liners. Fill with about 1/4 C of batter to get 9 muffins.
Bake at 400 for about 18 minutes.
