pizza dough is the new kouign amann.

a year ago it was kouign amann. 2010 is the year where i attempt to find the pizza dough recipe from scratch. i've already tried 3 different recipes & they were all fails.

this is the poolish for recipe #4. i'm feeling really good about this one.

tonight i make dough from the poolish.

eventually i'll invest in a pizza stone or ceramic tiles for my oven. i've avoided buying a stone because i've owned 3 of them & ended up dumping them because i moved somewhere else. for reasons i don't remember now, lugging the stone to a new place was not an option.

i'm convinced that if i buy yet another stone, i'll have to move again.

wait. that might not be such a bad thing.
