Chai Spice Wafers.

this week i was still trying to figure out what to bring to:

*the dennis the menace family thanksgiving dinner*.

then i remembered last year's chai cookie recipe fail & although i totally dropped the search for a decent chai cookie recipe after that, i decided to try again this year.

i note that recipes for chai cookies tend to use just a bag or two of chai tea, but when you eat the cookie you can't really taste the chai spices. so when i saw Ezra Pound Cake's recipe for Chai Butter Cookies, i decided to add just a little bit of each of the chai spices to the cookie dough in the hopes that this would make the cookie more fragrant.

here are the spices/amounts that i used:

1/2 tsp ground cinnamon
1 /2 tsp ginger
½ tsp cardamom
1/4 tsp ground allspice
1/4 tsp star anise
1/8 tsp white pepper

i thoroughly chilled the dough & flattened the dough balls 2 ways- completely with the bottom of a glass & then just sort of with a fork, but either way they spread big time which is why i'm calling these Chai Spice Wafers instead of cookies.

these are pretty good cookies, but still not what i'm looking for. i can really taste the cream of tartar which reminds me of snickerdoodles & i love that they are crispy thin because they'll go perfect with tea, but i think what i'm really looking for is a shortbread cookie.

as to the added spices- definitely added some fragrance, but i'm not sure if it's enough. i'll have to experiment with the spices & amounts all over again in a shortbread dough.

& so it goes.
