little rhubarb cakes.
this is not going to be the weekend of the financiers.
i got ahold of some rhubarb that i was going to use for something more labor intensive.
nice attempt at distracting myself from sewing, but no.
remember the buttermilk donut cupcakes? easy to make & delicious as is, but how would they be with rhubarb in them? so, i chopped the rhubarb into a small dice (approx 1 1/2 ribs = 1 1/2 cups), and folded it into the batter.
they were fast & they were fantastic: supersoft vanilla buttermilk cake with a touch of nutmeg(i really love this recipe), tossed with cinnamon sugar & studded with juicy bits of tart rhubarb.
yes, please.
i might go up on the rhubarb next time. maybe to 2 cups. everything else stays the same.

I love rhubarb too! If you ever try the buttermilk cake recipe (with or without the rhubarb), let me know what you think. :)
